OUR WINES
Our grapes are produced in the sandy gravel of the lower slopes of the Helderberg. This combination of location and ideal soil type results in minimal irrigation being required. The Mediterranean climate contributes to the even ripening of the grapes, and the nearby ocean provides a cooling breeze in the hot summer afternoons. These factors create the perfect environment for growing our two classic noble grape varieties.

Deciding when to harvest is done through visual selection, tasting and analysis. Typical fruit flavours, tannin structure and uniform ripeness are the main considerations in the selection process. The fruit is harvested by hand then transported to the cellar for de-stemming and crushing. Next, it goes into old-style open-top concrete fermentation tanks to ensure sufficient skin contact. After fermentation, the wine is pressed and then stored in French oak barrels for the secondary (malolactic) fermentation. Barrel maturation lasts for 18 months, after which the wine is bottled and hand-labelled.

The focus in the vineyard is on maximising the fruit and structure in the grape. In the cellar, our aim is to preserve those flavours and maintain freshness, elegance and finesse.

2017

SOLD OUT

Cabernet Sauvignon / Cabernet Franc

The moderate weather pattern during the early stages of the growing season and following through till late into summer, ensured even ripening. Small berries due to the 3rd year of extra dry conditions gave concentrated berries. No wonder that 2017 is hailed as one of the best vintages of the decade.

The colour of the wine is deep, black centered. It has a smoky, dark chocolate aroma, brimming with bright fruits like mulberries and pomegranate. A hint of spice rounds off the nose. The palate is immediately accessible, dominated by ripe fruit, cedar wood and earthy tones . It is compact and neatly surrounded by oak inspired tannins. The wine matured in 70% new and 30% older 225L oak barrels for 18 months. It is still youthful, with slightly unbalanced grape and wood tannins, at odds with each other, on the finish. With time this will become well integrated.

2015

SOLD OUT
